This classic Colombian coffee delivers the perfect balance of sweetness, fruity effervescence, and rich cocoa/toffee foundation that makes Colombian coffee world-renowned across multiple growing regions. Sourced as a blend from 10-30 smallholder farms with comparable quality scores, these lots are carefully cupped and purchased directly in regional centers like Popayán for Cauca, Pitalito for Huila, and Pasto/La Unión for Nariño. Using Colombia's traditional washed processing method, ripe cherries are de-pulped the same day of harvest, fermented 12-36 hours in open-air tanks, then washed clean and dried on patios or in specialized dryers to create the clean, bright profile Colombian coffee is famous for.
