This Honduran coffee showcases the unique microclimate characteristics of higher-elevation farms in Marcala, where ideal conditions, varieties, and practices intersect to produce coffees with higher acidity, good structure, and natural sweetness. Sourced through strong relationships with quality-focused cooperatives like Cooperativa RAOS, a 250-member organization in Marcala, La Paz, this coffee represents the most stable results and highest potential from this emerging specialty origin. Using traditional washed processing, ripe cherries are de-pulped the same day of harvest, fermented 12-24 hours in open-air tanks, washed clean of mucilage, then carefully dried on patios or raised beds for an average of 15 days to preserve the coffee's distinctive regional profile.
